Sometimes I don’t have time to juice. Nor do I always have the abundance of fresh produce that is required for it. So I blended up a green drink last night with what I had on hand and it turned out pretty darn good! Blending veggies is great because you get all the important fiber that they contain as well as the valuable vitamins and nutrients.
I like to make sure I get my fill of fresh greens into my body daily and this drink was an easy quick fix for fulfilling part of that order. I blended up water, spinach, cucumber, lemon juice, lime juice and ginger root. Mmmm. Refreshing.
Spinach– full of cancer fighting phytochemicals, iron, calcium, folate, vitamin A and potassium.
Cucumber– high in water content so it hydrates cells, full of antioxidants and has anti-inflammatory compounds.
Lemon– high in vitamin C for immunity, aids digestion, detoxifies the body and promotes proper liver function.
Lime– high in vitamin C, has antioxidants, anti-cancer, antibiotic properties and is great for detoxification.
Ginger– aids digestion, eases nausea of all types, is a powerful anti-inflammatory and can reduce muscle pain.
Ginger Citrus Green Drink
- 2 large handfuls baby spinach
- 1/2 cucumber, sliced
- juice of 1/2 lemon
- juice of 1 lime
- 1 Tbsp. ginger, grated
- 32oz cold water
Blend everything together in a high speed blender for 2-3 minutes or until blended. Serves 2-4.
Note: Best when sipped first thing in the morning but can be enjoyed at any point in the day, or night!
Another note: An orange would add a perfect amount of sweetness to this drink. Must try that next time.
