Blueberry Vanilla Coconut Oatmeal (gluten free, dairy free)
- 1/2 cup GF rolled oats
- 1/2 cup water
- 1/2 cup coconut milk
- 1 scoop vanilla protein powder (I use this kind)
- 1 Tbsp. coconut oil
- 1/2 cup blueberries
- 1 Tbsp. shredded coconut
- 1 tsp. raw honey or other sweetener of your choice
Combine oats, water and coconut milk in a microwave safe bowl and cook for 2 minutes. Add protein powder and coconut oil and mix well. Top with the blueberries and coconut and drizzle with honey. Serves 1.
