Chocolate Chip Banana Muffins (gluten free)

I just had a baby recently and I have been reaching for chocolate daily. Okay, multiple times daily, probably because of the extreme exhaustion of caring for a newborn! So I decided to adapt my Paleo Banana Nut Bread and make these chocolate chip banana muffins since I had some over-ripe bananas on hand that would pair well with chocolate.

I also added ground flax to them because flax is supposed to help with increasing your milk supply, which is something else I have been struggling with. There are several foods that you can add to your diet to increase lactation like oats, brewers yeast, nuts, dark leafy greens and even hoppy beer! Hopefully with the addition of these bad boy muffins, plus eating oatmeal for breakfast daily, mother’s milk tea and taking galactagogue herbs like fenugreek, blessed thistle and moringa, I will be lactating much more to build up a supply for when I go back to work and leave my sweet baby. Sad face.

Chocolate Chip Banana Muffins (paleo, gluten free, dairy free, naturally sweetened)

Ingredients:

Directions: Pre-heat oven to 350 degrees. Combine the bananas, coconut oil, honey, eggs and vanilla in a food processor and pulse until combined. Pulse in almond flour, flax, coconut flour, cinnamon, salt and baking soda. Stir in chocolate chips. Pour into a greased muffin pan, makes about 10. Bake for 23-25 minutes or until an inserted toothpick comes out clean. Makes 10.
