When I’m in a rush in the mornings, I like to throw this simple breakfast together in a snap. It’s low in sugar, high in protein and fiber and keeps me full till lunch time. It’s also easy to switch up the berries or other toppings like shredded coconut, slivered almonds, chopped walnuts or pecans and keep it interesting!
Blueberry Yogurt Parfait
- 1 cup greek yogurt (substitute coconut yogurt for dairy free)
- 5-6 drops liquid stevia or to taste
- 1/2 tsp cinnamon
- 1/2 cup fresh blueberries
- 1/4 cup gluten free granola
Mix yogurt with the stevia and cinnamon in a small bowl or mug. Top with blueberries and granola. Enjoy!
