3 Ingredient Paleo Pancakes
- 1 large banana
- 2 eggs
- 1 Tbsp. coconut flour
- cinnamon, vanilla extract (optional)
Put all ingredients in a high powered blender and mix until well blended. Pour 1/4 cup size amounts for each pancake on a pan heated over medium-low heat and lightly coated in coconut oil. Flip when bubbles start to form on the edges. Serves 1-2.
I topped mine with fresh blueberries and drizzled with coconut oil. It was delish and very filling! The coconut flour really stretches this recipe to make a lot of batter. I ate all of them but I suppose you could share. 🙂
