Blueberry Arugula Bean Salad

This salad is fresh and full of nutritious foods. I love how colorful it is. That color means it’s loaded with powerful disease fighting antioxidants.

It comes together in a snap and fills your belly. It’s loaded with fiber so it keeps you feeling full until the next meal. Don’t leave out the bacon (unless you’re vegetarian/vegan!) because it makes the meal. 😉

Blueberry Arugula Bean Salad

Ingredients:

  • 1.5 cups arugula
  • 1/2 cup cherry tomatoes
  • 1 ounce crumbled goat cheese
  • 1/2 cup cannellini beans
  • 2 Tbsp. crumbled bacon (omit to make vegetarian)
  • 1/4 cup blueberries
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. olive oil
  • 1 Tbsp. balsamic vinegar
  • 1 tsp mustard
  • 1/2 tsp Italian seasoning
  • pinch of salt and pepper

Directions: In a medium sized serving bowl, put the arugula down first and then layer with the tomatoes, goat cheese, beans, bacon, blueberries and parsley. Combine the oil, vinegar, mustard and seasonings to make to the dressing and drizzle over salad. Toss and enjoy! Serves 1-2.
