Zucchini Shrimp Scampi with Bacon

Zucchini Shrimp Scampi with Bacon (gluten-free)

Ingredients:

  • 2 tbsp. olive oil
  • 1 medium onion, chopped
  • 2 medium zucchini, chopped
  • 6 garlic cloves, minced
  • salt and pepper to taste
  • 1 tsp red pepper flakes
  • 1 lb. jumbo shrimp, peeled and deveined
  • 2 tbsp. grass fed butter
  • 1/4 cup chopped bacon
  • 1/4 cup fresh parsley, chopped
  • 12 oz. gluten free linguine or zucchini noodles

Directions: In a large saute pan, heat the olive oil over medium heat. Saute the onion and zucchini for 5 minutes or until softened. Add the garlic and saute for 5 more minutes. Add salt, pepper and red pepper flakes to taste. Add shrimp and cook until just slightly pink. Add the butter, bacon and parsley and stir until shrimp are cooked through or fully pink. Serve with cooked noodles or zucchini noodles. Serves 4.
