This delicious dairy-free soup gets it’s creaminess from cauliflower! Oh the ever-so-versatile cauliflower, we love you! And bacon, we love you too bacon!

Creamy Sweet Potato Soup with Bacon

Creamy Sweet Potato Soup with Bacon (dairy-free, paleo)

Ingredients:

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 2 Tbsp. olive oil
  • 2 medium sweet potatoes, peeled and cubed
  • 1/2 head cauliflower, chopped
  • 1 Tbsp. fresh rosemary, chopped
  • 1 quart chicken stock (or veggie stock)
  • salt and pepper to taste
  • 1 cup crumbled bacon

Directions: In a large stock pot over medium heat, saute the onion, carrots, celery and garlic in the olive oil. When softened after a 4-5 minutes, add the sweet potato, cauliflower and rosemary. Stir and cook for 5 minutes then add the chicken stock. Season to taste with salt and pepper. Cover, bring to a boil and then reduce heat to low. Simmer for 30 minutes. Use an immersion blender or regular blender to puree the soup. If the soup is too thick it can be thinned with water or more stock. Top with bacon. Serves 4-6.
