Avocado Egg Salad Wrap

Ingredients:

  • 2 hard boiled eggs, chopped
  • 1-2 Tbsp. Homemade Mayo
  • 1 small avocado, diced
  • salt and pepper to taste
  • 1/4 cup shredded carrots
  • 1 collard green leaf for wrapping

Directions: In a small mixing bowl, gently mix together the first four ingredients. Layer the egg salad and carrots in the collard green leaf and wrap up like a burrito. Serves 1.
