So today is the first official day of Fall.
Yay for Fall! Fall foods are the best!
I decided to make a big batch of my favorite Fall squash, butternut squash. I love roasting butternut squash because it brings out the rich flavors in it. I combined garlic and sesame seeds to add some different flavor and texture to the dish. It turned out lovely. It’s a perfect side dish to a roasted chicken, a filet or even grilled fish.

Roasted Sesame Garlic Butternut Squash
- 1 medium butternut squash, cubed
- 2 Tbsp. olive oil
- 3 garlic cloves, finely minced
- 1.5 Tbsp sesame seeds
- 1 tsp. onion powder
- salt and pepper to taste
Directions: Preheat oven to 400 degrees. In a large mixing bowl, drizzle the olive oil over the squash and stir well. Sprinkle the rest of the ingredients and mix until evenly coated. Spread evenly on a large roasting pan and bake for 15-20 minutes. Serves 4.
