I’ve got another 2 ingredient recipe for you guys. It doesn’t get any simpler than this! I don’t even know if you can call this a recipe, rather just throwing two foods together and calling it a meal. Either way, it is so good. And it gets dinner on the table quickly after work.
And that makes me happy.
I like to feed my family salmon often for the incredibly beneficial omega 3 fats that it contains. And my 13 month old absolutely loves salmon. So that is cool. She also love my homemade sauerkraut. Mega cool!
- 16oz. fresh wild caught salmon
- 1/2 cup store bought pesto (I used this kind)
Directions: Preheat broiler on high. Spread the pesto all over the top of the salmon filet. Place directly under broiler and cook for 5-7 minutes or until the salmon flakes easily with a fork. Serves 4.
*Serve alongside some roasted veggies. I made roasted cherry tomatoes and Brussels Sprouts and it was divine.
