Lentil Soup for the Soul

It’s a soup-eating time of year because soup is cozy and so are the holidays. Here’s a great lentil soup recipe to have for those chilly nights.

Lentil Soup for the Soul


  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery sticks, chopped
  • 1 medium zucchini, chopped
  • 4 garlic cloves, minced
  •  1 Tbsp. sea salt
  • 1/2 tsp pepper
  • 1 Tbsp. Italian seasoning
  • 1 bay leaf
  • 1 pound dry lentils
  • 1 quart chicken stock or bone broth
  • 4 cups water
  • hot sauce to taste

Directions: In a large pot over medium heat, saute the onion, carrots, celery, zucchini and garlic in the olive oil until softened. Add seasonings, lentils, broth and water and bring to a boil. Cover and reduce heat to low. Simmer for 60 minutes. With an immersion blender, blend to desired consistency. Serve with hot sauce. Serves 6-8.
