3 Ingredient Almond Butter Cookies

Christmas-time means cookie-time.

It’s that time of year that desserts are lurking everywhere. Let’s face it, they’re oh-so-yummy but not always made with the healthiest ingredients.

These are some easy-to-make, 3 ingredient cookies that will satisfy your taste buds and add valuable nutrition to your health. I’ve made peanut butter cookies in the past but this time I tried it with the much healthier nut butter, almond butter. You can actually make these with any nut butter you like!

They’re sweetened with raw coconut sugar which unlike regular white sugar, doesn’t make your blood sugar spike and then crash afterwards. They are a great cookie choice for those watching their carbohydrate or sugar intake.

Ingredients:
1 cup almond butter
1 cup raw coconut sugar
1 egg

Directions: Preheat oven to 350 degrees F. In a medium size mixing bowl, mix together the almond butter and sugar until well mixed. Add the egg and mix until combined. Roll into rounded tablespoon sized balls and drop onto a cookie sheet lined with parchment paper. Using the tines of a fork, make crisscross marks while flattening them. Bake for about 10 minutes. Makes a dozen.

  1. I can’t wait to try these! Thank you for the recipe. I don’t care for peanut butter and never thought of changing a recipe to another nut butter.
