I love chia lately.
These little tiny seeds pack a powerful punch. They’re incredibly high in omega 3s, protein and fiber. You can read more about the amazing chia seed here.
This version of chia pudding is so light and airy that I’m calling it a mousse. It’s fluffy and velvety texture on the tongue is sure to delight your taste-buds! Enjoy!
Strawberry Chia Mousse
- 4 large strawberries, halved
- 1.5 Tbsp. ground chia (I use a coffee grinder to do this)
- 1/2 cup almond milk or coconut milk
- 3-4 drops liquid stevia or other sweetener of your choice
Directions: Add everything to a blender and mix for 1-2 minutes. Pour into a half pint mason jar (or mug) and refrigerate for an hour or overnight. Garnish with strawberries. Serves 1.
