We cook a lot of chicken in our household. It’s economical, healthy and very versatile.
However, I sometimes get into a rut when cooking chicken and start to make it the same boring way each time. Blah.
Enter -> spices.
I experimented with a mixture of spices that I don’t normally throw together in a spice rub and it actually turned out pretty good! Might tasty actually! I have to say, I’m very pleased with this Indian-inspired spice mixture and will definitely make it again! Let me know what you think about it!
8 Spice Chicken Quarters
- 2 tsp chili powder
- 1 tsp garlic powder
- 1 tsp turmeric
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp granulated onion
- 1/2 tsp ground cinnamon
- 1/4 tsp ground mustard
- 4 lbs chicken quarters (any other cut would work too, just adjust the cooking time)
- olive oil
Directions: Preheat oven to 425 degrees F. In a small mixing bowl combine all the spices. Drizzle olive oil onto the chicken and rub the spice mixture all over. Be sure to lift the skin and get in between the skin and meat so the meat is just as flavorful as the skin. (I tend to peel off chicken skin anyways so I prefer my meat seasoned well.) Bake for 30-35 minutes or until chicken juices run clear. Serve with steamed veggies or a salad. Serves 4.
